Perfect Cocktail for Potlucks






I often stress when the word potluck comes up.  What will I bring, will it be tasty, will people eat it...

I don't know what is worse, not having ANYONE try it, resembling the virginal  bed which no one has dived in.  Or WORSE, the singular scoop.  It was appealing to someone, but so terrible they chose not to go back for more.  Aaah... the anticipation, the possible rejection!

Drinks are the happy medium to my potluck anxiety.  Although, there is still the question of "will they or won't they" there are far fewer choices and lets face it... once they dig into the alcohol, there is a good chance they will go for more.

My choice (especially in the warmer months) is a White Sangria






 


6 Cups of mixed fruit (my choice was pineapple, mangos, canteloupe, and plums)
1/4 Cup thinly sliced ginger
1 Cup mint
4 ounces of orange flavored liqueur
    1 bottle of Pinot Grigio
    3 TB of fresh Lemon Juice

Mix the fruit, ginger, mint, orange liqueur and muddle it with the back of the spoon.  Then add wine and lemon.  Refridgerate up to a day (the longer, the better).  Serve over ice.

I believe in using fresh fruit... almost always.  In this recipe, I used fresh pineapple, canteloupe, mint, and ginger. The mangos, however, are frozen.  Why? Mango is one of my favorite fruits, but they are expensive and tricky to cut.  The frozen mangos chill the wine, while oozing the wonderful, super sweet juices as it thaws.  I think that is the winning touch to the Sangria.

This is also great for brunches, pool parties, warm evening get togethers.  You prepare it, leave it, and the guest serve themselves.

Summer... soo close!

Summer Is Here!!! Okay... not until June 20th, but it sure feels like it.  All our favorite shows are coming to end, school is getting out, and after this weekend blockbuster "the Avengers"... summer movies are just beginning. I love summer.  The long days, the sundresses, sandals, beach days, and backyard soirees.  That means eating and drinking.  My favorite backyard fare is carne asada tacos with Corona & lime... or a fresh margarita made with Silver tequila, limes, triple sec or fresh squeeze of Orange.  I can already taste the salt:)

But my favorite margarita is a Pineapple Margarita... a little bit a Mexican, a little bit of Hawaiian... its what I call a little bit of heaven.






This is a simple recipe. I love simple, why?  Because I  to want to hurry up and drink... or too busy chatting away with my ladies to do anything complicated.  All you need is Blanco Tequila, limes, pineapple juice, triple sec or Conintreau, and fresh pineapples for garnish.  I have a Jack Lulane, so I like to juice my own Pineapple & Limes... and it definitely highlights the taste.  Especially since I truly believe that nothing mimicks freshly juiced pineapple... its like candy!  No seriously, it tastes like a pineapple Jolly Rancher.  So ultimately, do whatever fancies you... juice, no juice.  Its your party!




Ingredients

  • 2 ounces of fresh limes
  • 2 ounces of tequila
  • 1 ounce of Triple Sec
  • 2 ounces of Pineapple Juice
Place them all in a shaker, and shake!

You can rim your glass with salt if you like.  In this margarita, I rimmed it in Li Hing Mui. Its a salty dried plum powder very popular in Hawaii.  Its not for every palate.  If you want more of Mexican feel, you can rim it with Chilimon.  Its a fruit seasoning of chili with salt & lime, often put on fruit.
